Toukiden 2 is an open-world demon-hunting RPG most similar to the Monster Hunter series. As you might expect from that comparison alone this means tracking down giant monsters, smacking them around with a wide variety of completely ridiculous weapons, and then using their most spiky bits in order to create even greater weapons and armor.

I haven't had the time to play it myself, so take the following with a grain of salt, but apparently its a pretty damn good competitor to Monster Hunter, and a rather charming game in its own right. Unfortunately there is one bit of bad news that might ruin Toukiden 2 for you, and that is the simple fact that it features absolutely no mouse support. I have no idea why the developers decided to dump all of the controls onto the keyboard, but thankfully you can just plug in a controller and bypass all of the potential issues that way.
